Rainbow Rice Krispies Treats Recipe
Always fun to make with your kids, this colorful Rainbow Rice Krispies Treats Recipe is perfect any day of the year! Now, I made this in a much larger lasagna pan so that my layers could be thick enough to really be visible. I still only managed to squeeze these 5 layers in even though I really wanted to fit 6 layers in…pink, orange, yellow, green and purple (I opted to omit blue!).
What you will need: lots and lots of Rice Krispies and marshmallows! I went through two of the large Rice Krispies boxes, 3 bags of marshmallows, and 7 1/2 out of 8 Tbsp in 1/2 cup bar of butter. Also, although I have held out to using a saucepan when making Rice Krispies treats for a looong time, I did microwave each batch of marshmallows for this recipe instance. So, melt your butter in a saucepan if you prefer to do it the ‘old fashioned’ way but the following instructions below will include the microwaved method.
I washed and cleaned my medium mixing bowl between each layer, so have one medium mixing bowl to heat the marshmallows in and another small mixing bowl with your Rice Krispies portion already measured out. To start, count 20 marshmallows per colored layer. Place 1 1/2 Tbsp of the butter in the medium bowl and microwave on high heat for 30-45 seconds until completely melted. Add desired food color per each layer then add 20 marshmallows, stir them to coat with the melted butter and microwave for 1 minute 30 seconds or until completely melted. Pause during the microwave time at the halfway point to stir the heating marshmallows.
Once the marshmallows are completely melted, add the 3 cups of Rice Krispies that have been portioned out into the small mixing bowl and are ready to add. Blend in the Rice Krispies until fully coated then transfer to your buttered pan and use either a) your buttered fingers (I find this to be easiest) or b) a buttered spatula (this would be the cleanest option) to press down the marshmallow Rice Krispies layer.
Wash the medium mixing bowl, refill the small mixing bowl, and repeat for each color layer that you would like to add. Refrigerate when done if you would like for them to set up a little more quickly…and, we added rainbow sprinkles as that’s what our daughter thought would look good as a finishing touch!
- 15 c Rice Krispies (3 cups per layer, 2-34.4 oz boxes)
- 100 marshmallows (20 per layer, 3-10 oz bags)
- 7 1/2 Tbsp butter (1 1/2 Tbsp per layer)
- 5 gel food colors (5 different colors: pink, orange, yellow, green, purple)
- rainbow sprinkles (optional)
Butter your 11 x 15 lasagna baking pan. Portion your first layer's worth of Rice Krispies into a small mixing bowl. Add 1 1/2 Tbsp butter to a medium mixing bowl.
Microwave butter for 30-45 seconds or until melted. Add desired gel food color, stir in 20 marshmallows and coat them in the melted butter.
Microwave marshmallow butter combination for 1 minute 30 seconds, stirring halfway through the heating period until completely melted. Add the portioned Rice Krispies to melted marshmallows immediately, blend until coated then transfer to buttered baking dish.
Using buttered fingers or buttered spatula, press each layer down firmly and evenly and into the corners of the baking dish. Clean your medium mixing bowl and repeat for each layer.
(Optional) Rainbow sprinkles can be added on top. Once all layers are completed, you can refrigerate the Rainbow Rice Krispies Treats to set them more rapidly.
