White Cheddar Lobster Macaroni and Cheese
One of the easiest and most insanely delicious meals you will ever make is this White Cheddar Lobster Macaroni and Cheese! So rich and flavorful with succulent tender pieces of lobster meat throughout the gooey, cheesy deliciousness of a stovetop mac n cheese! The cheese varieties can easily be changed up for personal preferences, but we used a creamy white cheddar combination of smoked white cheddar and white cheddar curds to compliment our perfect lobster mac. Yum!
What more needs to be said about anything as tantalizingly tasty as combining the most classic of comfort foods (mac n cheese) with the Cadillac of seafood (lobster)?! Not much, I’m sure 🙂
However, do remember that if you are swapping out cheeses based on personal preferences or availability, that quality does matter. If you use American cheese, I will show up and rap a wooden spoon on your knuckles…ok, not really! But, I recommend against it!
It’s taken a while to get this post up and on the blog, but this fantastic lobster was from an order to one of our favorite online sources, the Clam Man. See the other recipes from our summer seafood splurge (with a few more stragglers yet to be added), including Lobster Jalapeno Poppers, Gordon Ramsay’s HK Lobster Risotto, Steamed Clams, and Cod En Papillote.

Indulgent white cheddar mac and cheese to be served as the star for your main dish, or to compliment an amazing steak for a whole new level of 'surf and turf'!
- 1 lb elbow macaroni (cooked, drained, rinsed)
- 1/2 cup butter (1 stick)
- 2 Tbsp all-purpose flour
- 1/2 tsp white ground pepper
- 1/2 tsp salt
- 1/2 tsp onion powder
- 1 cup heavy cream
- 4 oz cream cheese (1/2 an 8 oz package, cubed)
- 1 cup white cheddar curds (chopped)
- 1 cup smoked white cheddar (chopped)
- 1 cup lobster stock
- 1 1/2 cup lobster meat (diced, save 1/2 cup for garnish if desired)
- fresh dill sprigs (for garnish, optional)
In a medium saucepan, melt the butter over medium heat. Once the butter is melted, add the flour (combined with seasoning - salt, white pepper, onion powder) and stir until a paste is formed. Add the heavy cream and stir until the mixture is smooth.
Add the cubed cream cheese, stirring into the sauce mixture until mostly melted. Add the lobster stock and warm the sauce up, enough to finish melting the cream cheese.
Add the chopped white cheddar curds and stir until mostly melted. Then add the chopped smoked white cheddar and stir until melted as well.
Pour the cheese sauce over the cooked macaroni noodles, and stir to coat all of the pasta. Add the diced lobster meat and gently stir into your stove top macaroni and cheese. Garnish with additional chunks of lobster meat and fresh dill sprigs, if desired. Serve immediately.
