Instructions
Preheat oven to 375 degrees F (190 degrees C) and wash, trim, and cut any large brussel sprouts into halves. Line a baking sheet with parchment paper.
In a large bowl, toss the cleaned brussel sprouts with olive oil, salt, and pepper until well coated. Transfer to baking sheet and spread evenly.
Roast brussel sprouts at 375 degrees F (190 degrees C) for 15 minutes, toss and continue to roast for an additional 15 minutes. While the brussel sprouts are roasting, toast crushed walnuts in a small, dry (no oil) frying pan over medium high heat. Keep the walnuts moving until slightly browned and toasted smelling, about 4-5 minutes. *Watch closely as the walnuts can burn easily!
For the final 15 minutes of roasting time, drizzle the maple syrup and sprinkle walnuts and cut cooked bacon over the brussel sprouts and mix to coat evenly. Then return to the oven and finish roasting. *The walnuts can be tossed with the brussel sprouts after roasting is completed, but will take on a slightly tender texture if cooked with the maple syrup, bacon, and brussel sprouts.
