Instructions
Start out with making your no bake cookies as usual, except when spooning the cookie mixture out onto your waxed paper use a heaping tablespoonful portion. Once all of your cookie mixture has been spooned out onto the waxed paper, use a teaspoon to push an indent into the center of the cookie.
Color your coconut by putting two one cup portions of the shredded coconut into ziploc baggies. Fill a small bowl or cup with 1 teaspoon of water and add the food coloring, mix thoroughly, then pour into the ziploc baggies. Seal the baggies up and work the coconut around in the bag to distribute the color. Spread colored coconut out onto a baking sheet and allow to dry.
Once the cookies are set and the coconut is dried, fill the wells of the cookies with the colored coconut. Place a Peep chick into the center of the cookie on top of the coconut, then place 4-5 mini jelly beans around the Peep chick on the coconut 'nest'.
