Our hearty Cheesy Tater Tot Hamburger Casserole is a throw back to one of my childhood dinner meals and a long-time favorite! It’s quick and easy, and it also happens to be the only reason I buy those packages of frozen mixed vegetables (the ones with the lima beans). The only time that my family eats lima beans…and they don’t even know it 🙂

Usually, because my husband and I love to cook together, we take our time and cook special meals. However, like many of you, there are nights when everyone in the household is busy or we get home late from work or school related events. Casseroles are the perfect meals for those nights (if you forgot to turn on your slow cooker that morning)!

I love this casserole for it’s mild flavors that everyone in the family will eat. It’s creamy and delicious and you can adjust the hamburger, vegetables, tater tots and/or cheese depending on what your family likes or based on what you have on hand. If you’re short on any of the main ingredients, this casserole still works. If you like more vegetables, it’s still tasty.

This is a hearty, creamy casserole that is quick to prepare and get on the table! We love the tasty filling topped with crispy tater tots and melted cheese!

Ingredients

  • 1 Tbsp olive oil (extra virgin - if using non-stick pan for browning your hamburger)
  • 1 1/2 lbs ground beef (browned and drained of excess grease)
  • 1 26 oz can cream of chicken condensed soup (family size - cream of mushroom works too)
  • 1 cup milk
  • each, salt & pepper (to taste)
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 Tbsp Worcestershire sauce
  • 2 lbs frozen mixed vegetables (thawed)
  • 2 lbs frozen tater tots (+/- use enough to cover your casserole)
  • 1 cup cheddar cheese (grated)
  • 1 Tbsp parsley (fresh, chopped or dried - optional)

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C).

  2. In a large casserole dish, combine the cream of chicken and milk. Add seasoning (salt, pepper, garlic powder, onion powder), Worcestershire sauce, and frozen mixed vegetables. *Preferably the mixed vegetables have been thawed or rinsed with warm water. If still completely frozen, you may need to cook longer.

  3. Add drained, browned ground beef and stir all of the casserole filling ingredients together. Top with a generous layer of tater tots then sprinkle cheese and parsley over the tater tots.

  4. Bake at 375 degrees F (190 degrees C) for 35-40 minutes, or until the filling mixture is bubbling around the casserole dish edges and the tater tots are completely cooked through. Serve immediately.

  5. **Refrigerate or freeze unused portions in an airtight container. Leftovers will store 3-4 days in the refrigerator and 2-3 months in the freezer.
